Egg, Spinach & Feta Mini Muffins

Ingredients

  • 6 large eggs

  • 1/2 cup chopped fresh spinach

  • 1/2 cup crumbled feta cheese

  • (low-fat or reduced sodium)

  • 1/4 cup diced red bell pepper

  • 1/4 cup diced onion

  • 1 clove garlic, minced

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon paprika

Instructions

1. Preheat the oven to 375 F

2. In a large bowl, whisk together eggs, salt, pepper, and paprika.

3. Add chopped spinach, crumbled feta cheese, diced red bell pepper, diced onion, and minced garlic to the bowl. Mix well to combine.

4. Grease a mini muffin cupcake tray with cooking spray or oil.

5. Pour the egg mixture into each muffin cup, filling about 3/4 of the way full.

6. Bake for 15-20 minutes or until the edges are lightly golden brown and the centers are set.

7. Remove from the oven and let cool for a few minutes.

8. Serve warm or at room temperature.
